This past Friday, June 20, my mother celebrated her 60th Birthday. As part of the family tradition, mom was able to pick out dinner for Sunday and not have to cook. So, she gave the request last week and all she wanted was BBQ Steak. Well, we couldn't very well just have Steak, we had to have sides or salads and dessert. I finally figured everything out and spent the majority of Saturday evening getting everything prepared. (Sometimes Sunday meetings extend longer than normal, so I had to have everything prepared in case meetings ran late.) I know one of mom's favorite salad is potato salad, but she only makes it at Easter because even though she likes to eat it, she doesn't like to make it. I decided this would be my first attempt at the family potato recipe salad. It turned out to be okay. In addition to the potato salad we had Ugly (Broccoli) salad, Blueberry salad, and one that mom and I call apple apple Snickers. I looked at the menu and realized there was probably not much there that Amber and Chase would like, so while at the store I grabbed some Rhodes rolls. For dessert I made cheesecake. The meal was a lot of food, but mom always goes the extra mile for our birthdays, we for sure could do it for her!
After dinner we all gathered around to give mom her present. This year all of us decided to pool our funds and get mom a gift certificate to her favorite store. Which is what we did, that way she can spend some time in the mall and get her a bunch of clothes that she really wants.
Over the years I have really appreciated the support given to me by my mom. She is a great mom and would do anything for any of her children or grandchildren. Thanks for all you do mom! How your day was great and here's to another 60 years!
