A New Treat

A few weeks ago I ran across this recipe for a no-bake cheese cake. As you all know, if something involves cream cheese, then you can count me in! I made it for Sunday dinner a couple weeks ago. The dessert was requested again for Ali's birthday dinner. I made it again today. This time, I remembered to take a couple pictures. It is really good and with the fresh fruit is nice treat on a warm summer day. I found the recipe at Kraft Kitchens(dot)com. But of course I am willing to share. Recipe below:


No-Bake Jell-O Topped Cheesecake Bars



40 Vanilla Wafers (finely crushed)

5 T Butter (melted)

1/2 Cup Sugar (divided)

2 pkgs (8 oz.)cream cheese (softened)

1 tub 6 oz. Cool Whip Dips thawed
1 large banana sliced

1 Cup strawberries, sliced

1 Cup Blue berries
3/4 Cup boiling water

1 pkg (4 serving size) Lemon Jell-O

1 cup ice cubes

PREHEAT oven to 350 degrees. Mix wafer crumbs, 1/4 cup sugar, and the butter until well blended. Press firmly onto bottom of 9X13 pan. Bake 5 to 9 minutes or until lightly browned. COOL COMPLETELY.

PLACE cream cheese and remaining 1/4 cup sugar in separate medium bowl; beat with electric mixer on medium speed until well blended. Gently stir in cool whip dips. Spread over crust. Top with the fruit.

STIR boiling water into dry gelatin mix in medium bowl until gelatin is completely dissolved. Add ice cubes; stir until ice is completely melted. Pour over fruit. Refrigerate 1 hour or until firm. Cut into 24 bars to serve. Store leftover bars in refrigerator.

I think I just found our dessert for 2 Sundays from now! My dad hates cream cheese so I maybe shouldn't make it for Father's Day :)
