
This is not just any caramel popcorn, this is the multi-state (Utah and Georgia) famous caramel popcorn made by my good friend Crystal. The popcorn is delicious and Crystal claims low-fat. I will be honest, she gave me the recipe, there is nothing low-fat about this. However, I don't really want to burst her bubble. The popcorn is so rich and gooey, that if you eat it with your fingers, you spend the rest of the night licking it off your fingers. After all, you can't let that deliciousness go to waste. Instead, I just use my fork.
Even more important than the popcorn itself. If I have some of this popcorn in possession, that means I just got back from dinner with my friends the Rowleys and the McGhies. Crystal and Natalie are a couple of former coworkers of mine and over the years we have kept in touch and try to go out to dinner a few times a year. They bring their husbands and sometimes their kids. I always have such a great time with them. Brent and Rob (the husbands) are really nice guys. Brent is full of awesome hunting stories, which you all know I enjoy and Rob as a mechanic can fix anything. Whenever something seems to be going awry with one of my vehicles I ask him--"What about this?" I am never opposed to a free vehicle analysis, although I try hard to limit my questions. I never want to feel like I am taking advantage of the friendship.
Saturday night we had one of our dinner outings and as usual, I had a great time. So, today I am grateful for this Caramel Popcorn and all it represents.
